Our sugar cane molasses is an all-natural, non-GMO, grade A batched product from independent sugar cane plantations in Florida and Louisiana.  Most molasses-based rums are made from the final byproduct of sugar refining, ‘blackstrap molasses’, which is very low in sugar.  The molasses we use hasn’t fully undergone refining — it has a high sugar content and retains a lot of the great characteristics of the initial cane juice.  It helps us to create a one-of-a-kind rum that combines industrial and agricultural styles.

Our yeast strain was carefully selected as it is an imperative part of influencing the flavor of our rum.  Not only is a successful fermentation necessary to create alcohols, but there are also a number of by-products of fermentation that can significantly affect the flavor profile.

NYC water is the best tasting in the world!  But seriously, the chemical composition is actually great for making spirits (and pizza and bagels).
